Pacific Standard is our most popular cheese. The high fat content of whale milk is reduced prior to curdling, resulting a creamy, firm texture. Its flavor is slightly fruity when young and develops into a deeper, nuttier profile as it matures.

Soft Ripened Farmstyle

Our Soft Ripened Farmstyle cheese is made with whole, unskimmed whale milk and has a buttery texture is reminiscent of a traditional French soft cheese. Its nuanced pallet suggests its maritime origins.

Maritime Blue

Maritime Blue is another interpretation of our soft-ripened cheese. We incorporate roqueforti bacteria into the curds prior to aging. We also skim the milk slightly prior to production, resulting in a firmer overall cheese.

Maritime blue has an intense, rich taste. This one is for the real cheeseheads.

Salt-Aged 

Our Salt-Aged cheese has a hard texture and intense flavor. We age this cheese for a minimum of 12 months during which the unpasturized whale milk takes on a compact and bold form.
